You’ve had that night. It is time for dinner and all you have is packaged stuff. And we all know all the hoopla about processed foods and whatnot.
Well, so make it a little better.
Tonight I am making this:
Thankfully, I am the queen of doctoring things! No, I can’t really reduce the sodium, but I can add yummy stuff and nutrients with what I have in my cabinets and fridge.
Yay! Brown rice and broccoli! The package calls for 3/4 cup of hot water and 3/4 cup of milk. In order to accommodate the new ingredients, add 1/4 cup to both! So, you end up with a total of 2 cups of liquid. Just add the frozen broccoli and brown rice straight out of the package into the casserole dish. Then, bake according to directions.
It isn’t gourmet, and I wish I had some cheddar cheese on hand, but it will do. It will serve its purpose and will taste decent. I plan on serving it with biscuits and salad.
So, here it is to 1 day left of school and still managing to get dinner on the table!
I will probably edit this post and add a pic of it plated nicely after it is done cooking later 😉
